Inspired by a mutual love of chocolate oranges, 'Til the Night Closes In is an imperial milk stout we created with our good friends at Jester King. We wanted something dark and rich accented by the brightness of fresh citrus, so Jeff and Averie brought up a bunch of dried tangerines and fresh satsuma oranges from central Texas to punch up the Mandarina Bavaria hops in the whirlpool. After fermentation we steeped the beer on cacao nibs, Madagascar vanilla beans, and fresh Valencia orange peel. The result is smooth and sweet with a tart pop of citrus. Enjoy!

Influenced by tradition in Belgium, American Low Country is a true-to-style Belgian Dubbel. Made with dark and light candy sugar, and cold conditioned for 6 weeks, this beer has a soft malt flavor and a sweet, fruity yeast ester. Coming in at 7%, it’s a nice winter warmer for the “beautiful” weather heading this way.
We brewed this Beire du Miel for the yearly Honey Summit hosted in St. Louis. This year beer was brewed with Pilsner malt and Spelt. A heavy dose of aged hops and Rosemary Honey in the boil lend grassy and floral aromas. We then added more Rosemary Honey at the end of fermentation that lended a nice tart finish from the lacto in the Honey. It was then let to age in stainless until supremely dry, and then package conditioned naturally in kegs.
A blend of 60% imperial stout aged in whiskey barrels aged 20 months & 40% wheat wine aged in rye whiskey barrels for 15 months. 13% ABV
This year’s Anniversary Blend combines three distinct threads, bringing forward a complex blend of barrel-aged strong ales. It is comprised of 45% Blue Ridge aged 12 months in second-use Maman barrels, 33% Maman aged 20 months in Rittenhouse Rye barrels, and 22% Wheat Wine aged 28 months in Rittenhouse Rye barrels. To continue on with this yearly blend, we’ve decided to leave this without adjuncts to let the beer speak for itself. Layers of chewy oak, chocolate covered raisins, finish with a rich body. Complex, yet surprisingly drinkable at 14.5%. Cheers to another year around the sun.
Apparent Destination is the fourth beer we’ve made for the yearly Honey Summit put on by the National Honey Board. This year, we made a saison brewed with rice, Missouri unmalted red wheat, four year old whole cone Cascade, Missouri wildflower honey, black peppercorn and plums. Fermented on more plums, we then lagered this Saison for 6 weeks before racking half into second use Smooth Ambler barrels and kegging the rest. Layers of stone fruit, bubblegum, black pepper and honey all day.

A Belgian style ale that pours bright with an egg shell cap that leaves sticky lacing above the sunset orange color. Our primary Belgian yeast strain is accompanied by Brettanomyces Bruxellensis for two fermentations that create deeper aromatics of stone fruit and farmhouse pollen and flavors of honey and green tea.
Bailey's Chocolate Ale is a sessionable English-style oatmeal stout steeped on cacao nibs and Madagascar vanilla beans to provide a subtle sweetness on top of layers of bitter chocolate and roasted malt.
BA 17 is the barrel-aged version of our imperial mint chocolate stout. It's a blend of select barrels of our imperial stout, which have been aging in Rittenhouse Rye Barrels for more than a year before being infused with cocoa nibs, dried peppermint, and Madagascar vanilla beans. Rich fudge and brownie batter flavors meld with layers of caramel and oak vanillin, all brightened by a measured wave of cooling mint. On the finish there's a subtle hint of maple and dried tobacco. BA 17 is a decadent dessert in its own right and also pairs wonderfully with ice cream.
Our 2016 cider is a blend of pressed juice from Midwest-grown Fuji, Jonathan, Red Delicious, and Golden Delicious apples. The juices undergo a mixed fermentation in wine barrels for one year before blending and bottle conditioning. Our cider is unfiltered and all natural. We hope you enjoy the results of these traditional production methods.

We brew this amber colored Autumn lager every year for our great friend Kevin Willman of Farmhaus. Brewed with German Pilsner and German Munich Malt, this light crisp lager has a nice bready backbone with a light cracker finish. Unfiltered and crushable, this beer keeps you going through the fall months.
Calling Hours is a 6.5% haze craze IPA, heavily dry-hopped with equal parts Lemon Drop and Motueka. This adult beverage feels like walking through a strawberry field, opening a pack of peach rings on a road trip, and chewing an entire pack of Fruit Stripe gum.
Campers' Reserve is the result of aging our flagship Belgian-style Pale Ale, Hommel Bier, in oak puncheons with Brettanomyces Bruxellensis. After resting for six months, we dry-hopped with Cascade, Simcoe, and Huell Melon prior to bottle conditioning with a house blend of Brettanomyces. Juicy grapefruit, orange, and pine dominate the aroma, with accents of spicy Brett phenolics. The sip provides a fruity punch of hop candy supported by bready malt. Soft, yet tropical and spicy Brett rounds everything out and extends into the finish, making for a unique and elegant experience. 5.9% ABV

Citra Paradisi is a six grain saison dry-hopped with Citra, Simcoe, and Mosaic. A touch of grapefruit oil was added prior to packaging to create a light and bright citrus note, a natural extension of the hop character. Fermented with a blend of a favorite farmhouse ale strain and Brettanomyces Claussenii. Citra Paradisi was brewed to celebrate the 35th birthday of The Wine and Cheese Place, a cornerstone of the Saint Louis beer scene and one of our biggest supporters from the beginning. Pairs brilliantly with a variety of cheeses, goat cheese tarts, and roast chicken.

Corail de Sang is a Belgian-style Saison with torrified wheat aged in red wine puncheons with Brettanomyces for seven months. Bottle conditioned, oak aged and brewed in collaboration with Paul Hayden and the Wine and Cheese Place to celebrate their 35th Anniversary.

We took our beloved Cave Torch recipe, and doubled up the hops in it to give you all the OJ y’all deserve. Brewed with Pilsner malt, gobs of Flaked Wheat and a touch of Chilean grown Vienna malt, we ferment it on top of over 3lbs/gallon of mandarin orange purée. Finally a double dose of New Zealand grown Wakatu, Citra and Amarillo brings back memories of eating Tang powder out of the pantry, Orange Julius and that time you got lost in a cave and your headlamp burned out. Grab a Torch and let it guide the way.
7.5% DDH Double IPA brewed with gobs of flaked oats and touch of Vienna Malt. Hopped early in fermentation with Simcoe Cryo, and then crushed with more Simcoe, Centennial and Amarillo at the tail end of fermentation. Drinking this beer reminds us of eating brûléed grapefruits during the first snowfall, Simcoe encrusted orange slices after a morning of powder skiing, and riding on the back of firetrucks with Paul Simon playing.
Devil's Heart of Gold wheatwine is built on a massive yet simple foundation of American two-row barley and white wheat. We boil the wort for 3-1/2 hours in our direct-fired kettle to allow Maillard reactions to develop, lending unique caramelized notes to the wort. It is then fermented with a classic English ale yeast in stainless steel before being laid to rest for 15 to 21 months in Rittenhouse Rye whiskey barrels. This process allows our already decadent beer the opportunity to smooth out and take on additional complexity from the oak. The result is a chestnut-hued beer of substantial strength with layers of toffee, maple, and vanilla. Serve cool, but allow the aromas and flavors to develop in the glass around 52-58F.
We decided to make the final riff on our beloved Hazy Lite, Hurry on Daylight, inspired by a favorite frozen treat. Brewed with a slightly beefed up malt bill and a touch of lactose in the kettle, we then threw Blood Orange and Tangerine purée in at rate of 2lbs/gal. Finally dry hopped with the usual blend of Cascade, Amarillo and Crystal, with some Sabro thrown in for good measure. This beer reminds us dipping an orange Mamba into Tang powder, the time you came home late and mixed orange sherbet with vanilla ice cream, and eating frozen orange juice concentrate with a tye dyed spoon.
Dry-hopped Red Saison Conditioned with Brettanomyces
Inspired by the Abbey ales of Belgium, we created a dark, malty dubbel using a varieties of specialty malts, dark Belgian candi sugar, and dried Deglet Noor dates from California. Brewed in collaboration with The Block Restaurant. Ideally paired with roasted/grilled/smoked meats and chocolate. 7% ABV
Edgewild is a mixed-fermentation saison based off a simple grist of Pilsner and wheat malt. It underwent a primary fermentation in stainless with two different farmhouse ale strains before being moved to barrels from EdgeWild Winery with a house cocktail of Brettanomyces and souring bacteria, where it was allowed to age and mature for 10 months. Bottle conditioned.
The rebirth of Fantastic Voyage is a return to slow jams and silk sheets. We combine a smooth yet strong imperial milk stout base with a heap of dried coconut in the whirlpool. The result is a luscious blend of bakers chocolate, subtle roast, and sweet coconut. So take a sip and just sail on.

Five Little Monkeys is a throwback collaboration with our good friends at 2nd Shift Brewing to celebrate the opening of their new brewery and tasting room. Paying homage to some of the craft beers that first inspired us, this American pale wheat ale is bursting with grapefruit and apricot. 6.1% ABV
Flat Rock was created using the traditional saison production method of bière de coupage, which combines a fresh, young beer with mature, barrel-aged beer. We blended equal parts of fresh Saison de Lis with a mixed-fermentation saison that had been aging in a French oak foeder for over a year, and then allowed them to mature further before bottle conditioning. The result is light and bright, with flavors of lemon peel and orange complemented by a soft minerality. Enjoy Flat Rock on its own as an aperitif or with lighter fare. Blended exclusively for Bluestem in Kansas City. 5.0% ABV
Belgian-style farmhouse ale brewed with wheat, spelt, and oats (and barley!) A spicy yeast character enhances the orange peel and coriander additions, blending the line between saison and wit. 5.0% ABV
Fluorescent Grey is a 6.5% ABV juicy haze maze of heavy handed Citra and Cascade on top of a fluffy bed of rolled oats. Tastes like Fruit Loops, OJ, grapefruit, oats - so pretty much a balanced breakfast.
Foeder Coupage is a Bière de Coupage comprised of mature Foeder-aged Saison and fresh Blonde Ale dry hopped with Huell Melon and Styrian Golding. Blended together in stainless and left to further mature, it was then package conditioned with champagne yeast. Limestone, lemongrass, cantaloupe and Asian Pear all dominate the aroma and palate. This beer reminds us of Lemon Lime Gatorade filtered through limestone caverns, canoe trips down the Huzzah River, and slicing pears with a granite knife. 7.2% ABV

Frances is a 100% Oak-Fermented South City saison. Fermented entirely with yeast captured in South City St. Louis in the early spring of 2015, and aged in American Oak for 11 months. This saison is an expression of time, care, and evolution, three things monumental in cementing love.
Fruits of Labor is a new series of fruited foeder-aged mixed fermentation beer. First aged for many months in one of our large format French Oak foeders, we then move the mature beer into stainless steel on top of a massive amount of fruit. This series will be a way to experiment with different fruiting combinations and flavors with this iteration featuring blackberries and raspberries.
Funky Wit begins its life as a traditional Belgian-style Witbier, with whirlpool additions of sweet orange peel, coriander, and black pepper, and a primary fermentation in stainless steel with a classic yeast strain. It's then inoculated with a house blend of Brettanomyces, Lactobacillus, and Pediococcus, and left to age in our oak foeders for at least a year. After bottle conditioning, the resulting beers displays a soft yet bright acidity, which livens up the gentle coriander spicing and the sweet coconut and vanilla tones of the oak.

Blend 1 brings together a Puncheon fermented Red Wheat and Rye Saison aged for 7 months and conditioned on Apricots, with a single barrel of 17 month old French Oak fermented South City Wild Ale. This batch was entirely fermented in French Oak with both Brettanomyces and natively captured yeast and bacteria. Packaged conditioned with a house blend of Brettanomyces, Giant Steps Blend 1 will change and develop with aging.

Glitter & Gold is a Midwest bière de miel brewed with Missouri wildflower honey, a good grip of spelt, and flaked oats. Soft and billowy, yet intensely floral. It's a toast to the wedding of our good friends, Chad and Ashley. Drink with ones you love. Bottle conditioned.
We’re excited to announce a collaboration with our friends at Grace Meat + Three. Grace Hominy Lager is a Mexican-style lager brewed with hominy sourced and cooked by the crew at Grace. Clocking in at 4.8% ABV, it’s refreshing and a perfect companion for southern cuisine, especially fried chicken.
We took our hazy lite, Spare Parts, and fermented it on a half pound per gallon of grapefruit purée and the result is a crusher for this end of summer heat. This beer reminds us of hot days at Loufest, a pine tree grown in a grapefruit half, and Animal Collective sets at Lollapalooza. 6.2%
Matt's first recipe, IPA #16 aka Handshake drugs (#therealipa16) is a 100% Huell Melon Dry-hopped IPA. Clocking in at 6.4% and 36 IBUs, Handshake Drugs brings a soft bitterness with big notes of melon, strawberry and a mellow earthiness. Named for a song by St. Louis area legends and Matt's favorite band, Wilco, whose music demonstrates the human condition draped in rock and roll. Reminiscent of these vibes, this beer will calm the nerves and fill the soul.
Heart of Gold is our Wheatwine, an American take on the classic Barleywine. Brewed to "wine strength" but with a malt bill full of wheat, Heart of Gold has a beautiful tawny color from its extended boil. Flavors of molasses, brown sugar, and honey covered biscuits are characters of the maltiness that are accentuated by the fruity and nutty yeast that was used to fermented it to 10% ABV. American hops balance the bold body with their clean bitterness and citrus forward flavor.
Coming in at 6.2%, this DDH IPA reminds us of mango pina coladas in Hawaii, orange creamsicles in July and Stephen A. Smith saying “weeeeeed”.
A dry-hopped Belgian Pale Ale which defies tradition by combining Chinook and Columbus hops in the kettle, a dry hop addition of Simcoe, Cascade, and Mt. Hood Hops, American malts, and a Belgian yeast strain. The result is a beer with earthy and spicy tones from the yeast and a slight orange note contributed by the hops. Our first beer--draft only.
Honeydewdz is a DDH DIPA we brewed in collaboration with Resident Culture Brewing Company with honey supplied by the National Honey Board! Built around a sturdy malt bill of Golden Promise and Malted Oats, we threw some delicious MO Wildflower honey and NC Sourwood honey into the whirlpool with a heavy hand of Simcoe and finally dry-hopped twice with Mosaic, Citra and Simcoe Cryo. This beer reminds us of missing white water rafting excursions in North Carolina, flower encrusted mangoes, and dank oranges slices at halftime of your 3rd grade soccer match. #methodéhaze.

Spring is around the corner, so get your tank tops and flip flops out and get on that boogie board. We took our new hazy lite release Hurry on Daylight and added some lactose and Orange Flavored Citrus Punch to it and the result was this hoppy brew meets Orange Julius mashup. Drinking this beer reminds us of post CYC soccer game orange slices, trips to the mall food court and sugary “breakfast” drinks.

A hybrid of beer and cider inspired by the Jack Rose cocktail and fermented with lime and pomegranate juice
Keith's Korner is a new IPA featuring an English yeast strain known for its fruity aroma. We used Golden Promise as the base malt along with Munich for some additional backbone. Brewed with Simcoe and Centennial and dry-hopped with Denali, Motueka and an Experimental hop, this IPA will be light orange in color with aromas of dreamsicles, tropical fruit, and grass.
Once again we’ve teamed up with our buds from Craft Beer Cellar to keep the summer months rolling. We revisited an old recipe and fermented on Kiwi purée to bring this bright tropical acidic crusher to life. This beer features notes of blue Gushers, electrocooler Hi-C, and eating kiwis whole in the backseat of a ‘89 Camaro.
We invited our good friend Ron Jeffries from Jolly Pumpkin down to brew a beer with us that encompasses the Missouri Peach harvest. Brewed with Vienna malt, unmalted wheat and flaked oats, this beer went through primary fermentation in stainless steel with a classic Belgian yeast strain. It was then racked into French Oak barrels with a house blend of bacteria and yeast and aged for 9 months. We then racked the mature beer onto 1500 pounds of fresh Missouri Peaches where it rested for 3 additional months, and finally was conditioned naturally in this bottle.
Lake Russ is a collab we cooked up with some old buds Shared. We decided to use the same malt bill, ours a touch smaller than theirs, and we thoroughly dry hopped with equal parts Mosaic and Idaho 7. This IPA reminds us of dank orange juice, getting your credit card compromised at the diner, and trips to the cage. 6.5%
In March 2018, Phil celebrated his 40th birthday by brewing an IPA with his old friends at Half Acre Beer Co. The result is Lascaux, named for the region in France where the earliest known cave paintings by prehistoric humans were discovered in 1940. Lascaux is heavily dry hopped with Ekuanot and Citra, and best enjoyed while pondering what life was like for humans 17,000 years ago. 6.7% ABV. 45 IBU
Long Descent is a new Hazy Lite beer we brewed up with 2-Row, expressive Vienna malt, fluffy flaked oats, and zippy spelt. Hopped only in the fermenter with Ekuanot Cyro and Centennial this hoppy brew reminds us of fishing in Michigan, honey dipped orange slices, and post Thanksgiving naps.
Hop saturated IPA brewed with Spelt and flaked oats. Dry hopped intensely with Citra, and gently with Galaxy 6.5%ABV
Every year we set aside a few of our absolute best barrels of imperial stout to stand on their own, unadulterated and without adjuncts. We call this blend Maman, or the mother of our barrel-aged stout series. 2017 Maman was aged for 18 to 20 months in Rittenhouse Rye and Elijah Craig barrels before blending and packaging. It's our purest expression of beer in oak and presents a luxurious combination of cocoa, caramel, vanilla, and maple wrapped up with a big boozy bow.
Mango Drawing Sight is the first fruited varietal in our Hazy Lite series. Similar to the ethos of the original, we let the Mango accentuate the hops, and still lie within balance thanks to a silky malt bill. Mango hop candy on the nose with a balance of tropical and dank hop notes throughout. This beer reminds us of eating Mango gummies and floating down the Huzzah in a pinecone lined grapefruit boat. 6.2%
Maroon View is a 4.8% American Pale Ale brewed with 2-row, flaked oats, and spelt. A generous dry-hop of Centennial and Ekuanot Cryo bring out flavors of orange marmalade and mango honey. Drinking this beer reminds us of bonfires in November, sunrises after Daylight Savings time, and listening to Tyler Childers with the windows down and the heat on.

Masterfade is a Farmhouse IPA fermented on a plethora of mandarin purée and dry hopped with Citra. It reminds us of that one time Cave Torch took a trip across the pond to Belgium and hung out at Brasserie DuPont and being hungover at brunch on Sundays.
Belgian-style Saison dry-hopped with German Hallertau & package conditioned. Brewed in collaboration with The Commons.

Merna is a mixed culture ale aged in oak. Brewed with a heavy amount of wheat and gently hopped in order to give the selected yeast and bacteria culture the ability to be fully expressed. Aged for 8 months in selected oak wine barrels, then package conditioned. Pours golden-orange, and has a sweet-tart/funky aroma rounded out by the oak presence. Originally brewed for our brewer Tim Doeschot's wife, we now share the love for all to enjoy!

Nothing to Find is a mixed-culture oak aged saison brewed with Spelt and unmalted wheat. Boiled for multiple hours with aged whole cone hops, and fermented in stainless steel with a favorite Belgian yeast strain to preferred dryness. Transferred into French Oak wine barrels and further fermented and aged with resident South City cultures for 9 months, Nothing to Find was then conditioned naturally with a house blend of Brettanomyces. 6.2%
Inspired by old world producers and blenders, this oak-aged Saison is brewed with spelt and unmalted wheat. The smell of funky cheese and attic relics come from the long boil and aged, whole-cone hops. The taste of sweet-tarts rolled in barn hay is thanks to our resident South City cultures and is smoothed out by time spent in French Oak Barrels. Everything is punctuated with bottle conditioning using our house-Brett blend. While each component is important, the sum is more than the parts in this complex and beautiful nod to tradition as old as beer itself.
Objectively Opaque is a hazy IPA which blends our house ale strains and is dry-hopped with a lavish amount of uber-fresh Amarillo, Idaho-7, and Eukanot Cryo. Notes of candied mango, summer hikes in the Ozark Mountains, and beachside mimosas. Brewed for our mutual love of cornhole and in collaboration with Narrow Gauge. 6% ABV

On y Va, or "Let's Go!", is a modern saison brewed with barley, wheat, and oats, and fermented with two classic saison strains. For an American fruit punch, we hopped it generously in the kettle and fermenter with the Pink Boots Blend created by YCH Hops and the Pink Boots Society, a global nonprofit organization supporting women in the brewing profession. More than a dozen women in the St. Louis brewing community gathered at Perennial Artisan Ales on International Women's Day to brew On y Va.

Owen is a table strength saison kettle and dry-hopped with Mosaic, and package conditioned with Brettanomyces Claussenii. It opens with aromas of ripe papaya and subtle pineapple. The tropical character continues on the palate with complementary notes of rose petals and mineral water. High attenuation and a lean base of Pilsner malt and torrified wheat combine to create an incredibly dry beer with a snappy finish. Serve as an aperitif or try with ceviche.
Table Saison dry-hopped with Mosaic, conditioned on spent Black Currants and Boysenberries for 3 months, and carbonated naturally in kegs for 7 months with Brettanomyces.

As always brewed with a malt bill comprised of a bevy of European specialty malt and loads of flaked oats. With this rich stout base, the coffee melds with the caramel and chocolate malts to bring forward layers of chocolate cake and freshly brewed coffee, all wrapped up with a smooth yet boozy finish. This beer reminds us of putting chocolate sauce in your morning coffee, late night diner hangs, and early morning stout brew shifts.11.5% ABV
For the Coffee Stout Variant this year we chose a pretty crazy bean from our budz up at Dark Matter. They took an awesome bean from the Vista Hermosa farm in El Salvador and aged it in Heaven Hill barrels, which have previously held Vermilion. Tropical fruit, caramel and a slight hint of dark chocolate dominate the aroma, followed by a palate filled with espresso-covered caramel blackberries and a classic cup of joe on the long finish. 11.5% ABV.

Pilot Talk is a new hazy IPA brewed with pilsner malt, flaked oats, spelt and Chilean-grown Vienna malt. Dry-hopped heavily with Simcoe, with a touch of Mosaic and Chinook to round it all out. This beer reminds us of pine tree sap that’s actually orange marmalade, passing clouds on a sunny day, and listening to Curren$y with the windows up. 7.0% ABV

Pils is our dry-hopped, unfiltered lager created with 100% German malt and a blend of German hops in the kettle and fermenter. Spicy noble hop character over sweet Pilsner malt. Pepper, lemon ice, black tea. 5% ABV, 30 IBUs
German-style wheat beer with Pineapple and Kumquat
Polite Nodding is our next “Hazy Lite” rolling out of the brewery. Each version displays a sturdy malt bill with rotating hop selections. This version is hopped with Ekuanot Cryo and Citra. Notes of citrus, honeydew, fresh cut grass, and the dankness, with a cereal finish to balance. Reminds us of hot-boxing your car in the college parking lot right after breakfast.
Next up in our rotating dry hopped saison series is another singular feature in Loral Cryo. This beer reminds us of dropping your Bubblicious in a hay pile, lemon pepper Triscuits, guzzling watered down frozen Lemonades, and Arnold Schwarzenegger's lair in Batman and Robin. 5.5%
Prism is a new, ongoing series we created to reflect classic and experimental hop varietals through the form of dry-hopped saison. Three times a year we'll release cans and draft of a new Prism using a simple grist and a blend of saison yeast strains to create a platform for showcasing a different combination of hops.
PRISM: amarillo + wakatu is a 6.2% dry-hopped saison with Amarillo and Wakatu hops.
For the third installment of Prism, our dry-hopped saison series, we selected Cascade and Hallertau Blanc. Using the same simple grist, and expressive Belgian yeast strain, this itineration of Prism exudes huge grapefruit notes blended with massive aromas of white tea with a slight classic grassy finish that we all love in saison.

Using a simple grist and a favorite Belgian yeast strain, Prism is an ongoing series showcasing different hop varietals. This latest iteration of Prism featuring Huell Melon & Centennial hops. Grapefruit pith, Cantaloupe and a noble hop finish, meld with a crisp malt bill, supported by a touch of Flaked Wheat, and finishes with balanced Belgian yeast esters.
This Prism utilizes the same simple grist and classic Belgian yeast strain, and is dry-hopped with German-grown Mandarina Bavaria and Spalt. This beer reminds us of peeling an orange by the pool in July, black pepper Wheathins, humid bike rides to the Botanical Gardens, and taking a shower after mowing the grass. 5.5% Available in cans and on draft.

Prodigal is an imperial oatmeal milk stout with a massive fudge and roast malt character. It’s a foundation for some of our favorite stouts, now here to stand on its own adorned with only a handful of cacao nibs and Madagascar vanilla beans to round out the edges.
We brewed this hazy IPA with our good friends Trillium out in Boston. Brewed with gobs of Spelt, and heavily dry-hopped with Mosaic and Galaxy. Brewery release only.

We want this beer to have broad appeal for generous, kind hearted Aussie (and international) beer lovers right across the spectrum and inclusive of drinkers wishing to support this fantastic cause with a delicious beer or two.
Reverie is a blend of barrel-aged strong ales. We began with an imperial red ale and aged it for 15 months in Rittenhouse Rye and red wine barrels before combining the two threads and packaging. The barrels imparted a deep chocolate hue and a decadent mix of vanilla, maple, and red fruit. Notes of cocoa, caramel, and spicy oak emerge as the beer warms in the glass. Full and slightly effervescent on the palate, Reverie continues to evolve long into the finish. At 12% abv, it's warm but well-rounded and perfect for sharing as the nights turn crisp
River Mist is our new DDH IPA with Bru-1, Cascade and Simcoe. River mist reminds us of a long morning cast into a crisp Montana stream filled with tropical rainbows. Eating fresh summer peaches from a Georgia orchard while frolicking to Barenaked Naked Ladies’ One Week. 6.5%
We brewed this hazy IPA with our friends from Other Half in Brooklyn, NY. With a malt bill constructed upon European grown Pilsner and both Flaked Oats and Wheat, we utilized our house ale yeast blend to amplify the heavy dry-hopping. First crushed with some 2019 Citra, then finished off with more 2019 Citra, 2019 Mosaic and 2019 Galaxy (from our budz at OH). This hoppy brew reminds us of shotgunning carbonated pineapple juice, Sour Diesel carts, sun baked mango slices, and trippy Ferris Wheels rides in a hop wind tunnel.
A straw colored Belgian-style Saison brewed with chamomile flowers. It is fermented with a traditional saison yeast strain that imparts fruity and spicy notes that dovetail perfectly with the tea-like quality of the chamomile. Finishes dry, tart, and refreshing.

Saison des Rêves is the 2nd installment of our 10th Anniversary Collaboration series. Conceived over a series of emails with our new friend and idol Yvan de Baets we landed upon a spelt heavy saison recipe that speaks true to both of our outlooks on Saison. Snappy bitterness is coupled with massive wave of melon and freshly cut wet grsss from a dry hop of Huell Melon. Finally we naturally carbonated Saison des Rêves in cans and kegs for ultimate crushability. Drinking this beer reminds us of the freshly cut grass after a light rain of cantaloupe chunks, the first roll of a soccer ball over the morning dew on a chilly spring Midwest morning, and the version of He’s Gone from the 10/15/76 show in LA. 5.2%
Sanctuary Fog is a new 7.2% hoppy brew we cooked up with loads of flaked wheat and spelt. Dry-hopped early in fermentation with Cascade, then hammered with Mosaic, Motueka and Cascade at the tail end. This beer reminds us of pulp free orange juice soaked biscuits, mango top hats, and driving tropical fruit cars in the snow. Endlessly crushable for sure.

Not only do they make some of our favorite beers, they're also some of our favorite people. This Thursday, we are super excited to share our long overdue collaboration, Sandwich Lord!
Sandwich Lord is a 7% West Coast IPA brewed in collaboration with our friends at Civil Life. It features Falconers Flight and Cascade hops, and a clean American Ale yeast strain. We find layers of grapefruit, lemon, pine resin and orange hard candy, all stacked between light “bready” malts.*

This year's batch of Savant Beersel began with a strong Belgian-style pale base beer fermented with a favorite strain of Brettanomyces and allowed to mature in red wine barrels for 12 months. We then blended the best barrels with fresh Norton grapes from our friends at Charleville Vineyards in Ste. Genevieve, Mo., and allowed it to referment to dryness in stainless steel for 3 months before bottle conditioning for an additional 4 months. The result is a celebration of Brettanomyces and Missouri wine grapes. Tart and bright grape and berry notes combine creating a bracing acidity over earthy funk and subtle caramel malt. The time spent in oak provides a gentle oak vanillin that softens the Norton's firm tannin. Concentrated and complex with lively carbonation. Bottle conditioned.

Another year of Belgian Fest collabs wouldn’t be complete without another hazy IPA with someone who has influenced our ideas on what hoppy beer can be, like WeldWerks. Brewed with a blend of malt bills from both breweries and crushed with freshy-fresh Citra, Simcoe and Ekuanot Cryo. Notes of mixing orange juice and pineapple juice at the Holiday Inn Express, bike rides on the beach in Savannah, and orange marmalade covered trees.
“She’s like a rainbow” is a rosé inspired “graf”. This interpretation blends our Merna, a mixed-fermentation ale aged in oak, with a cider made from local apple juice fermented with a clean ale yeast, then aged in oak. We then blended equal parts onto raspberries in stainless steel for secondary fermentation. The result is dry, lightly funky, and fruit forward fusion of beer and cider. Bottle Conditioned
Ship of the Sun is a mixed fermentation saison created with a blend of a favorite farmhouse ale strain and Brettanomyces. Hopped in the kettle and fermenter with Styrian Goldings and East Kent Goldings. Package conditioned.
IPA thoughtfully dry-hopped with some old school C's; Columbus, Cascade and Chinook. Spare parts reminds us of space time continuums, bruleed grapefruit halves for breakfast, the summer of 2010, and drinking Fresca poolside while listening to Poolside.
Static Electricity is an 8% DIPA brewed with Flaked Oats and Vienna malt grown in Chile. Hopped in the kettle and dry-hopped with a reasonable amount of Simcoe and Falconer's Flight. Apricot and oranges on the nose and palate with a slight bitterness.
Imperial Stout with Ethiopian "Roba" beans roasted by Sump Coffee and available exclusively in our tasting room!
We brewed this massive imperial stout to celebrate the 10th anniversary of our good friends at Churchkey. Brewed with peanut flour and salt, fermented on chocolate sauce, and steeped on whole roasted peanuts, this high gravity beverage reminds us of eating too many Reese’s Eggs and crushing donuts hungover on a Monday morning with Tim Liu.
Thoroughly New is a new hazy IPA we brewed with our bud Jude from Hop Butcher for the World! Dry-hopped with a 40/40/20 blend of Citra, Mosaic, and Strata, this beer reminds us of dank smells at Seger shows, the syrup from Tropical Blend fruit cups, drinking frozen pineapple drinks out of pineapples on the beach, and Winterland ‘73.
Unicorn Tears is our imperial stout base aged for 18 months in Heaven Hill bourbon barrels and then steeped on Balaton Tart Cherries from Michigan for 4 months. Brewed in collaboration with our friends at Fremont Brewing Company. 13% ABV

Imperial Stout with ancho chilies, cacao nibs, cinnamon, and added vanilla
Vermillion is our English-Style Barleywine which is built around a base of Munich and 2-Row. Additions of Special-B and Caramel malt coat your nostrils and palate with waves of caramel covered raisins. This beer reminds us of wading through streams of caramel, fly-fishing with raisins instead of flies, and streusel lined Ugg Boots. Draft Only.
A big, rich English style Barleywine that, as its name suggests, has tints of ruby around the edges of its brown body, with a toffee, caramel, toasted pecan sweetness that is kept in balance with a smooth, alcohol warmth, and slightly fruity American hop note. This will be perfect around the fire, with a cigar, with a rich meal, or just while cozying up and relaxing with family and friends this season. It may be enjoyed right away, or allowed to age in the bottle. Vertical tastings are encouraged.
To create Von Pampelmuse, we souped up our Berliner Weisse base with generous doses of Mandarin orange and Rio Red grapefruit during fermentation. The result is a juicy summer crusher bursting with citrus.
This hazy wheat IPA is brewed with a heavy hand of red wheat, white wheat and flaked wheat, and then dry-hopped heavily with equal parts Mosiac, Huell Melon and Mandrina Bavaria. We brewed this within the same fermentation profile as our last couple of IPAs, lending to its hazy appearance and full body. This beer reminds us of that one time you put orange juice into your Trix, eating tangerines in a wheat field, and the first time you heard Charles Bradley. Take a drive on the hazy side.

Working Title, a Belgian-style pale ale conditioned with Brettanomyces Bruxellensis. Kettle and dry hop additions of Crystal hops provide a bright orange complement to the pineapple and earthy funk of the Brettanomyces. Underneath is a lean, bready malt body that finishes dry and crisp.
